  • 1 tsp baking soda

  • 1 cup (226g) unsalted butter, softened
  • ¾ cup (150g) packed brown sugar
  • ¼ cup (50g) granulated sugar
  • 2 large eggs, room temperature
  • 2 tsp pure vanilla extract
  • 1 cup (150g) dried tart cherries, chopped
  • 1 ½ cups (270g) semi-sweet chocolate chips
  • Flaky sea salt (optional, for sprinkling on top)

Instructions

  1. Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper or silicone mats.
  2. In a large bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a separate bowl, cream the softened butter, brown sugar, and granulated sugar with an electric mixer until light and fluffy, about 3-4 minutes.
  4. Beat in the eggs one at a time, then add the vanilla extract and mix until smooth.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed just until combined. Avoid overmixing.
  6. Fold in the chopped dried cherries and chocolate chips gently.
  7. Using a cookie scoop or spoon, drop 2-tablespoon-sized balls of dough onto the prepared baking sheets, spacing about 2 inches apart.
  8. Optionally, sprinkle flaky sea salt on top of each cookie dough ball.
  9. Bake for 10-12 minutes until edges are golden and crisp but centers remain soft.
  10. Let cookies cool on the baking sheet for 5 minutes, then transfer to a cooling rack to crisp completely.

Notes

Use softened butter, not melted, for best texture. Do not overmix the dough to avoid tough cookies. Chill dough for 30 minutes if it feels too soft or if cookies spread too much. Sprinkle flaky sea salt on top before baking for enhanced flavor. Cookies continue to firm up as they cool.
