  • 3 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon white vinegar
  • 1/2 teaspoon sugar
  • 1/4 teaspoon salt
  • Freshly ground black pepper to taste
  • Smoked paprika for garnish

Instructions

  1. Place 6 large eggs in a single layer at the bottom of a medium saucepan. Cover with cold water by about 1 inch.
  2. Bring to a rolling boil over medium-high heat, then immediately cover the pot and remove from heat. Let eggs sit for 12 minutes.
  3. Transfer the eggs to a bowl of ice water for at least 5 minutes to stop cooking and make peeling easier.
  4. Gently tap and peel the eggs under running cold water to remove shells without tearing the whites.
  5. Slice peeled eggs in half lengthwise. Carefully scoop out yolks into a mixing bowl.
  6. Mash yolks with a fork until crumbly but not powdery.
  7. Add mayonnaise, Dijon mustard, white vinegar, sugar, salt, and freshly ground black pepper to taste. Stir until smooth and creamy.
  8. Taste and adjust seasoning as needed.
  9. Using a spoon or piping bag, fill each egg white half with the yolk mixture, forming a neat, slightly heaping mound.
  10. Sprinkle smoked paprika over each egg for color and smoky flavor. Add any chosen variation mix-ins if desired.
  11. Refrigerate the deviled eggs for at least 15 minutes before serving to allow flavors to meld and filling to set.

Notes

Use eggs that are a few days old for easier peeling. Shock eggs in ice water immediately after boiling to stop cooking and ease peeling. Adjust filling consistency with milk or more mayo if too thick, or extra yolk if too runny. Make ahead by assembling a few hours in advance and refrigerate covered.
