  • 3/4 cup (150g) granulated sugar
  • 1/4 cup (50g) brown sugar
  • 2 large eggs, room temperature
  • 1 3/4 cups (220g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • For the cinnamon streusel topping:
  • 1/4 cup (50g) brown sugar
  • 1/4 cup (30g) all-purpose flour
  • 3 tablespoons (43g) unsalted butter, cold and cubed
  • 1 teaspoon cinnamon
  • Optional: 1/4 cup chopped walnuts or pecans

Instructions

  1. Brown the butter: Melt the butter over medium heat in a light-colored skillet, stirring constantly until golden brown and nutty, about 5 minutes. Remove from heat and let cool slightly.
  2. Preheat the oven to 350°F (175°C). Grease a 9×5 inch loaf pan or line with parchment paper, leaving overhang for easy removal.
  3. Make the cinnamon streusel: In a small bowl, combine brown sugar, flour, cinnamon, and nuts if using. Cut in cold cubed butter with fingers or pastry cutter until crumbly. Refrigerate until ready to use.
  4. Mash the bananas in a large bowl until smooth but still slightly chunky (about 1 1/2 cups).
  5. Whisk the browned butter, granulated sugar, and brown sugar into the mashed bananas. Add eggs one at a time, whisking well after each. Stir in vanilla extract.
  6. In a separate bowl, whisk together flour, baking soda, salt, and cinnamon.
  7. Gently fold the dry ingredients into the wet batter in two additions, mixing just until combined to keep the bread tender.
  8. Pour the batter into the prepared loaf pan and spread evenly. Sprinkle the cinnamon streusel topping generously over the batter.
  9. Bake for 55–65 minutes or until a toothpick inserted in the center comes out clean or with a few moist crumbs. Check at 50 minutes to avoid overbaking.
  10. Cool the bread in the pan for 15 minutes, then transfer to a wire rack to cool completely. The streusel will crisp as it cools.

Notes

Use a light-colored pan to brown butter for better color control. Avoid overmixing the batter to keep the bread tender. If streusel browns too quickly, cover the loaf loosely with foil halfway through baking. Cold butter is key for crumbly streusel. For gluten-free, substitute flour with gluten-free blend; for dairy-free, use coconut oil instead of butter. Nuts in streusel are optional and can be replaced with seeds for nut-free version.
