Cozy Breakfast Potato Casserole with Sausage and Pepper Jack

A warm and comforting breakfast casserole featuring crispy potatoes, spicy sausage, and melty Pepper Jack cheese, perfect for cozy mornings and easy to prepare in under 45 minutes.

  • 4 cups diced frozen hash browns or home-cooked diced potatoes
  • 1 pound spicy or mild ground breakfast sausage
  • 2 cups shredded Pepper Jack cheese (about 8 ounces)
  • 6 large eggs, room temperature
  • 1 cup whole milk or 2%
  • 1 small yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1 medium red or green bell pepper, diced (optional)
  • Salt and pepper to taste
  • 1 tablespoon butter or oil for sautéing
  • Fresh parsley or chives for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13 inch casserole dish with butter or non-stick spray.
  2. In a large skillet over medium heat, cook 1 pound of breakfast sausage, breaking it up with a spatula until no longer pink and starting to crisp, about 7-8 minutes. Drain excess fat if necessary but leave a little for flavor.
  3. Add the finely chopped onion and diced bell pepper to the sausage. Cook until softened and fragrant, about 5 minutes. Stir in minced garlic during the last minute to avoid burning. Set aside to cool slightly.
  4. In a large mixing bowl, combine 4 cups of thawed and patted dry frozen hash browns with the sausage and veggie mixture. Toss gently to mix evenly.
  5. In a separate bowl, whisk 6 large eggs with 1 cup of milk, plus salt and pepper to taste.
  6. Spread half of the potato and sausage mixture evenly in the baking dish. Sprinkle 1 cup (about 4 ounces) of shredded Pepper Jack cheese over this layer.
  7. Add the remaining potato mixture on top, pressing down lightly. Pour the egg mixture evenly over the entire dish, letting it soak in.
  8. Finish with the remaining 1 cup of shredded Pepper Jack cheese on top.
  9. Bake for 35-40 minutes, or until the cheese is bubbly and golden brown and a knife inserted near the center comes out clean.
  10. Let the casserole sit 5-10 minutes after removing from the oven before slicing and serving.

Notes

If cheese browns too quickly, tent casserole with foil halfway through baking. Use room temperature eggs and milk to prevent curdling. Thaw and pat dry frozen potatoes to avoid sogginess. Can be made the night before and baked fresh in the morning with an additional 5-10 minutes baking time.
