  • 2 tablespoons (30 ml) cold water
  • 1½ cups (280 g) jasmine rice
  • Sliced green onions (optional, for garnish)
  • Toasted sesame seeds (optional, for garnish)

Instructions

  1. In a medium mixing bowl, whisk together honey, soy sauce, rice vinegar, sesame oil, and minced garlic to prepare the sauce. Set aside.
  2. Place chicken thighs in the slow cooker.
  3. Pour the honey garlic sauce evenly over the chicken and gently stir to coat.
  4. Cover and cook on low for 4 to 5 hours or on high for 2 to 3 hours until chicken flakes easily and sauce bubbles.
  5. About 20 minutes before chicken finishes, rinse jasmine rice under cold water until clear and cook separately according to package instructions (typically simmer with water for 15 minutes, then rest 10 minutes).
  6. Once chicken is cooked, transfer it to a serving dish and keep warm.
  7. Pour sauce into a small saucepan over medium heat.
  8. Mix cornstarch with cold water to create a slurry, then whisk into simmering sauce.
  9. Cook for 1-2 minutes until sauce thickens to a glossy glaze.
  10. Return chicken to the thickened sauce and toss gently to coat.
  11. Serve hot over jasmine rice, garnished with sliced green onions and toasted sesame seeds if desired.
