  • 4 boneless, skinless chicken breasts (about 6 ounces each)
  • 2 tablespoons extra virgin olive oil
  • Salt and freshly ground black pepper, to taste
  • 1/2 cup chopped sun-dried tomatoes packed in oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream (240 ml)
  • 1/2 cup chicken broth (120 ml)
  • 1/2 cup freshly grated Parmesan cheese (50 g)
  • 1 teaspoon Italian seasoning (basil, oregano, thyme, rosemary blend)
  • 1/4 teaspoon red pepper flakes (optional)
  • A handful of fresh basil, chopped

Instructions

  1. Pat dry the chicken breasts and season both sides generously with salt and pepper. Let rest for about 5 minutes.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken breasts and cook 5-6 minutes per side until golden brown and cooked through (internal temperature 165°F). Remove chicken and tent with foil.
  3. Reduce heat to medium. In the same skillet, sauté minced garlic and chopped sun-dried tomatoes for 1-2 minutes until fragrant.
  4. Pour in chicken broth and scrape up browned bits. Simmer for 2 minutes to reduce slightly.
  5. Stir in heavy cream, Parmesan cheese, Italian seasoning, and optional red pepper flakes. Cook gently for 3-4 minutes until sauce thickens and coats the back of a spoon.
  6. Return chicken to the pan, nestle into the sauce, and simmer together for 3-4 minutes to meld flavors and warm through.
  7. Remove from heat and sprinkle with fresh chopped basil.
  8. Serve chicken breasts with a generous ladle of creamy sun-dried tomato sauce. Pairs well with garlic mashed potatoes or buttery pasta.

Notes

If the sauce becomes too thick, stir in a splash of chicken broth or cream to loosen it. Pound chicken breasts to even thickness for uniform cooking. Avoid boiling cream to prevent curdling. Rehydrate dry-packed sun-dried tomatoes in warm water for 10 minutes before use. Parmesan cheese should be stirred in off heat or on very low heat to avoid clumping.
