These creamy pimento cheese tea sandwiches with herbed cream cheese are a quick, easy, and satisfying snack or light meal featuring a tangy, fresh twist on classic Southern pimento cheese.

Ingredients

Scale
  • 8 oz sharp cheddar cheese, shredded (about 225 g)
  • 3 oz jarred pimentos, drained and chopped (about 85 g)
  • 1/2 cup mayonnaise (120 ml), full-fat
  • 1 tsp Worcestershire sauce
  • Hot sauce, a few dashes (optional)
  • Salt and freshly ground black pepper, to taste
  • 8 oz cream cheese, softened (225 g), full-fat preferred
  • 2 tbsp fresh parsley, finely chopped
  • 1 tbsp fresh chives, finely chopped
  • 1/4 tsp garlic powder
  • 1 tsp fresh lemon juice
  • Salt and pepper, to taste
  • 12 slices white sandwich bread, crusts removed

Instructions

  1. Prepare the Pimento Cheese Filling: In a medium bowl, combine shredded sharp cheddar, chopped pimentos, and mayonnaise. Stir gently to mix.
  2. Add Seasonings: Mix in Worcestershire sauce, hot sauce (if using), and salt and pepper to taste. Taste test to ensure creamy with a slight tang and subtle kick.
  3. Make the Herbed Cream Cheese Spread: In a small bowl, combine softened cream cheese with parsley, chives, garlic powder, lemon juice, salt, and pepper. Whip until smooth and well blended.
  4. Prepare the Bread: Lay out slices of white sandwich bread and carefully trim off the crusts.
  5. Assemble the Sandwiches: Spread a thin layer of herbed cream cheese on one slice of bread. Then spread about 2 tablespoons of the pimento cheese mixture evenly over the cream cheese layer.
  6. Top and Press: Place another slice of bread on top, gently pressing to adhere without squashing the sandwich.
  7. Slice and Serve: Cut each sandwich into triangles or small rectangles. Arrange on a platter and serve immediately or chill for up to an hour before serving.

Notes

Soften cream cheese at room temperature for at least 30 minutes before starting for easier spreading. If pimento cheese is too thick, add a splash of milk or more mayonnaise to loosen. Chill filling for 10 minutes before assembling to improve flavor meld and spreading. Use serrated knife to trim crusts cleanly. Sandwiches are best served chilled or at room temperature and should be consumed within 24 hours to avoid sogginess.
