A cozy and indulgent mocha combining the rich sweetness of white chocolate with the tart brightness of raspberry, perfect for a comforting coffee treat.

Ingredients

Scale
  • 1 cup (240 ml) freshly brewed espresso or strong coffee
  • 1/3 cup (60 g) white chocolate chips or chopped white chocolate
  • 1/4 cup (60 ml) fresh or frozen raspberry puree (thawed and strained if frozen)
  • 1 cup (240 ml) whole milk or dairy alternative (almond, oat, coconut, or cashew milk)
  • 1/2 teaspoon vanilla extract
  • 12 teaspoons sugar or sweetener (optional, adjust to taste)
  • Whipped cream (optional, for topping)
  • Fresh raspberries (optional, for garnish)

Instructions

  1. Brew 1 cup (240 ml) of strong espresso or coffee. If using a French press, use about 2 tablespoons (10 g) of coffee grounds for a robust flavor. Set aside.
  2. Prepare the raspberry puree by blending 1/4 cup (about 40 g) fresh raspberries until smooth. Strain through a fine-mesh sieve to remove seeds. If using frozen raspberries, thaw completely and strain.
  3. In a small saucepan over low heat, combine 1/3 cup (60 g) white chocolate chips and 1 cup (240 ml) milk. Stir constantly with a whisk or spoon until smooth and creamy, about 3 to 5 minutes.
  4. Remove the saucepan from heat. Stir in 1/2 teaspoon vanilla extract and 1-2 teaspoons sugar or sweetener if desired. Mix well.
  5. Pour the brewed coffee into a heatproof mug. Stir in the raspberry puree gently.
  6. Slowly pour the warm white chocolate milk into the coffee and raspberry mixture. Stir gently to combine.
  7. Top with whipped cream and fresh raspberries if desired.
  8. Serve immediately while warm.
