A quick and easy no-bake dessert combining fresh strawberries with velvety mascarpone cream, perfect for any occasion and sure to please both kids and adults.

  • 8 oz (225 g) mascarpone cheese, room temperature
  • 1 cup (240 ml) heavy cream, cold
  • 1/2 cup (60 g) powdered sugar
  • 1 tsp vanilla extract
  • 2 cups (300 g) fresh strawberries, hulled and sliced
  • 2 tbsp granulated sugar
  • 1 tbsp fresh lemon juice
  • 24 ladyfinger cookies (savoiardi)
  • Optional: fresh mint leaves for garnish

Instructions

  1. Prep the Strawberries: In a bowl, combine sliced strawberries with granulated sugar and lemon juice. Toss gently and let them macerate for 15 minutes to release their juices and soften slightly.
  2. Whip the Cream: In a chilled bowl, pour the cold heavy cream and beat with an electric mixer until soft peaks form (about 2-3 minutes). Add powdered sugar and vanilla extract, then continue beating until stiff peaks form.
  3. Mix the Mascarpone: In a separate bowl, gently stir the mascarpone to soften it. Carefully fold the whipped cream into the mascarpone using a spatula to keep it light and airy.
  4. Assemble the Tiramisu: Quickly dip each ladyfinger into the strawberry juice (just a quick dip to avoid sogginess). Layer half of the soaked ladyfingers at the bottom of your dish or glasses. Spread half of the mascarpone cream over the ladyfingers. Spoon half of the macerated strawberries and some of their juice on top.
  5. Repeat Layers & Chill: Repeat the layers once more—ladyfingers, mascarpone cream, and strawberries. Cover with plastic wrap and refrigerate for at least 3 hours, ideally overnight, to let the flavors meld and the dessert set.

Notes

Keep cream and mascarpone cold before whipping for best texture. Avoid over-soaking ladyfingers to prevent sogginess. Chill overnight if possible for best flavor and texture. For dairy-free, swap heavy cream with coconut cream and use dairy-free mascarpone alternatives. For gluten-free, use almond flour ladyfingers or gluten-free sponge cake.
