  • 2 boneless, skinless chicken breasts (about 1 lb / 450g), pounded to even thickness
  • 1 cup all-purpose flour (or almond flour for gluten-free)
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 large eggs, beaten, room temperature
  • 1 1/2 cups panko breadcrumbs
  • Oil for frying (vegetable or canola)
  • 1/2 cup hot sauce (Frank’s RedHot preferred)
  • 4 tbsp unsalted butter, melted
  • 1 tsp honey
  • Optional: 1 tbsp ranch dressing or blue cheese dressing (for dipping or drizzling)
  • 8 slices sturdy bread (sourdough or Texas toast)
  • 6 oz sharp cheddar cheese, sliced or shredded
  • 2 tbsp unsalted butter, softened (for grilling)
  • Optional: thinly sliced celery or green onions

Instructions

  1. Place chicken breasts between two sheets of plastic wrap and pound with a meat mallet or rolling pin until about 1/2-inch thick (5 minutes).
  2. Set up three shallow bowls: one with flour mixed with paprika, garlic powder, salt, and pepper; one with beaten eggs; and one with panko breadcrumbs (3 minutes).
  3. Dredge each chicken breast in the seasoned flour, shake off excess, dip into the egg, then coat thoroughly with panko breadcrumbs, pressing to adhere (5 minutes).
  4. Heat about 1/4 inch of oil in a large skillet over medium heat until shimmering. Fry chicken breasts until golden brown and cooked through, about 4-5 minutes per side. Drain on paper towels (12-15 minutes).
  5. In a small bowl, whisk hot sauce, melted butter, and honey until smooth. Toss fried chicken breasts in the sauce until fully coated (3 minutes).
  6. Butter one side of each bread slice. On the unbuttered side, layer cheddar cheese, a buffalo chicken breast (sliced if preferred), and optional celery or green onions. Top with another slice of bread, buttered side out (5 minutes).
  7. Heat a clean skillet over medium heat. Grill sandwiches until bread is golden brown and cheese is melted, about 3-4 minutes per side. Press gently with a spatula or grill press for even grilling (8 minutes).
  8. Slice sandwiches in half and serve immediately with ranch or blue cheese dressing for dipping (1 minute).

Notes

If bread browns too fast before cheese melts, lower heat and cover pan briefly. Maintain frying oil temperature around 350Β°F to avoid burning or greasiness. For gluten-free, use almond flour and gluten-free breadcrumbs and bread. For dairy-free, use vegan butter and dairy-free cheese alternatives. Baking chicken at 425Β°F for 20-25 minutes is a lighter alternative to frying.
