These wraps combine crispy grilled lemon herb chicken with creamy Caesar dressing and fresh romaine, wrapped in a soft tortilla for a quick, satisfying meal perfect for any occasion.

  • 2 large boneless, skinless chicken breasts (about 1 pound / 450g)
  • 2 tablespoons olive oil (extra virgin for best flavor)
  • Juice and zest of 1 large lemon
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano or 1 tablespoon fresh, finely chopped
  • 1 teaspoon fresh thyme leaves or ½ teaspoon dried
  • Salt and freshly ground black pepper, to taste
  • ½ cup mayonnaise
  • 2 tablespoons grated Parmesan cheese
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1 small garlic clove, minced
  • Salt and pepper, to taste
  • 4 large flour tortillas (10-inch / 25cm size)
  • 2 cups chopped romaine lettuce
  • ½ cup cherry tomatoes, halved (optional)
  • ¼ cup shaved Parmesan cheese
  • Optional: croutons, crushed

Instructions

  1. In a medium bowl, whisk together olive oil, lemon juice and zest, minced garlic, oregano, thyme, salt, and pepper. Add chicken breasts and coat evenly. Cover and refrigerate for at least 20 minutes, ideally 1 hour, but no more than 4 hours.
  2. While chicken marinates, combine mayonnaise, Parmesan, lemon juice, Dijon mustard, minced garlic, salt, and pepper in a small bowl. Whisk until smooth and well blended. Set aside or chill.
  3. Preheat grill or grill pan to medium-high heat (about 400°F / 200°C). Lightly oil the surface if using a grill pan.
  4. Remove chicken from marinade, letting excess drip off. Grill chicken for 5-6 minutes per side until internal temperature reaches 165°F (74°C) and chicken is golden brown.
  5. Transfer chicken to a cutting board and let rest for 5 minutes. Slice into thin strips or bite-sized pieces.
  6. Lay tortillas flat. Spread about 2 tablespoons of Caesar dressing down the center of each. Layer with chopped romaine, sliced grilled chicken, cherry tomatoes, shaved Parmesan, and crushed croutons if using.
  7. Roll tortillas tightly, folding in sides to keep filling inside. Slice each wrap in half diagonally and serve immediately or wrap tightly for later.

Notes

Marinate chicken at least 20 minutes but no more than 4 hours to avoid mushy texture. Pat chicken dry before grilling to prevent flare-ups. Use a meat thermometer to ensure chicken reaches 165°F for safety. Avoid overfilling wraps and wrap tightly to keep fillings inside. Prepare dressing and chop veggies while chicken marinates to save time.
