Crispy Zaatar Flatbread

A quick and easy flatbread with a tender, airy crust and a crispy za’atar topping, perfect for snacks or Mediterranean meals.

  • 2 cups (250g) all-purpose flour
  • 1 teaspoon instant yeast
  • 3/4 cup (180ml) warm water
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 3 tablespoons za’atar spice blend
  • 1 teaspoon sesame seeds (optional)
  • Water or olive oil for brushing

Instructions

  1. Activate the yeast: In a mixing bowl, whisk together 3/4 cup (180ml) warm water and 1 teaspoon instant yeast. Let rest for about 5 minutes until foamy.
  2. Mix the dough: Add 2 cups (250g) all-purpose flour and 1 teaspoon salt to the yeast mixture. Drizzle in 2 tablespoons olive oil. Stir until a sticky dough forms.
  3. Knead the dough: Lightly flour a surface and knead dough for 8-10 minutes until soft and slightly tacky but not sticky. Add flour if too sticky.
  4. First rise: Shape dough into a ball, place in bowl, cover with kitchen towel, and let rise in warm spot for 45-60 minutes until doubled in size.
  5. Shape the flatbread: Punch down dough and roll or stretch into a thin 10-inch (25cm) circle or oval on a floured surface.
  6. Prepare for baking: Place dough on parchment-lined baking sheet or preheated pizza stone. Brush lightly with olive oil or water. Sprinkle 3 tablespoons za’atar evenly and 1 teaspoon sesame seeds if using.
  7. Bake: Preheat oven to 475°F (245°C). Bake flatbread for 10-12 minutes until edges are golden and crisp and za’atar is fragrant.
  8. Cool and serve: Remove from oven and cool on wire rack for a few minutes to keep crust crisp.

Notes

Use instant yeast for quicker rise. Avoid over-flouring to keep bread airy. Preheat oven fully and use a pizza stone or hot baking sheet for best crust. Brush with olive oil or water to help za’atar stick and crisp the crust. Let dough double in size for airy crumb. Dough can be refrigerated overnight and brought to room temperature before baking. For gluten-free, substitute with gluten-free flour blend and add xanthan gum.
