Instructions

  1. Wash and dry all fresh fruit thoroughly. Hull strawberries, slice bananas into thick rounds, peel and segment oranges, and cut apple and pineapple into bite-sized pieces. Arrange fruit on a platter.
  2. Finely chop the dark chocolate bar into small, even pieces.
  3. Gently warm the heavy cream in a small heavy-bottomed saucepan over medium-low heat until it just starts to simmer around the edges; do not boil. Remove from heat.
  4. Add the chopped chocolate to the warm cream, stir gently with a spatula or whisk, let sit 1-2 minutes to soften, then stir until smooth and glossy. If needed, return to very low heat briefly, stirring constantly.
  5. Stir in the softened butter, vanilla extract, corn syrup or honey (if using), and a pinch of salt until fully incorporated and silky smooth.
  6. Pour the chocolate mixture into a warmed fondue pot to keep it at dipping temperature. If no fondue pot, keep warm over lowest heat or on a double boiler.
  7. Serve immediately with the fruit platter and use fondue forks or skewers to dip fruit into the chocolate.

Notes

Use high-quality dark chocolate bars for best results. Avoid water contact with chocolate to prevent seizing. Stir gently and avoid overheating. If fondue thickens, stir in warm cream to loosen. For dairy-free, substitute heavy cream with full-fat coconut milk and butter with vegan butter or coconut oil.
