A quick and easy breakfast parfait featuring layers of creamy Greek yogurt, mixed berries, crunchy granola, and a honey drizzle, perfect for busy mornings or light snacks.

Ingredients

Scale
  • 2 cups (480 ml) Greek yogurt, plain or vanilla-flavored
  • 2 cups (300 g) mixed berries (strawberries, blueberries, raspberries, blackberries), fresh or frozen (thawed)
  • 1 cup (100 g) granola, your favorite variety
  • 3 tbsp (45 ml) honey, for drizzling
  • 1 tsp (5 ml) vanilla extract (optional)
  • Lemon zest from 1 lemon (optional)

Instructions

  1. In a mixing bowl, combine Greek yogurt with vanilla extract and lemon zest if using. Stir gently until evenly mixed (about 2 minutes).
  2. Rinse fresh berries and pat dry. Slice larger strawberries into quarters or halves (3-4 minutes).
  3. Start by spooning about 1/4 cup (60 ml) of yogurt into the bottom of each mason jar.
  4. Add a layer of berries (about 1/4 cup or 40 g), followed by a layer of granola (2 tablespoons / 15 g).
  5. Repeat layers until jars are filled, finishing with berries on top (about 5 minutes per jar).
  6. Just before serving, drizzle 1 teaspoon (5 ml) of honey over the top of each parfait.
  7. Serve immediately or seal with lids and refrigerate up to 24 hours. Add honey drizzle right before serving if stored.

Notes

Do not mix granola into yogurt to keep it crunchy. Add honey drizzle just before serving to maintain texture. Use fresh, ripe berries for best results. Parfaits can be made ahead but add granola and honey at serving time. For dairy-free, use plant-based yogurt and maple syrup instead of honey.
