A quick and easy single serve chocolate mug cake with a gooey molten center, perfect for satisfying chocolate cravings in under 5 minutes.

Ingredients

Scale
  • 4 tablespoons (30 g) all-purpose flour
  • 2 tablespoons (10 g) unsweetened cocoa powder
  • 3 tablespoons (38 g) granulated sugar
  • 1/4 teaspoon baking powder
  • a pinch of salt
  • 3 tablespoons (45 ml) milk (whole, 2%, or plant-based)
  • 2 tablespoons (30 ml) vegetable oil or melted butter
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon (15 g) chocolate piece or chocolate chips

Instructions

  1. In a microwave-safe mug, combine 4 tablespoons of all-purpose flour, 2 tablespoons of unsweetened cocoa powder, 3 tablespoons of sugar, 1/4 teaspoon baking powder, and a pinch of salt. Stir until evenly mixed.
  2. Add 3 tablespoons of milk, 2 tablespoons of vegetable oil or melted butter, and 1/2 teaspoon vanilla extract. Stir gently until smooth and no dry pockets remain.
  3. Drop 1 tablespoon of chocolate chips or a small piece of chocolate into the center of the batter without stirring.
  4. Microwave on high for 60-70 seconds, checking at 60 seconds. The edges should be set and the center slightly soft and jiggly.
  5. Let the mug cake rest for 1-2 minutes before eating to allow the molten center to settle.

Notes

Use a 10-12 oz mug to prevent overflow. Do not overmix batter to avoid tough texture. Adjust microwave time based on wattage; better to undercook slightly for a molten center. For gluten-free, substitute flour with gluten-free blend. For vegan, use plant-based milk, coconut oil, and vegan chocolate chips. Let cake rest 1-2 minutes after microwaving before eating.
