  • 4 cups (600g) fresh strawberries, hulled and sliced
  • ⅔ cup (135g) granulated sugar
  • 2 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking pan lightly with butter or line it with parchment paper.
  2. In a large bowl, combine 1 ½ cups all-purpose flour, 1 cup rolled oats, ⅔ cup brown sugar, 1 tsp baking powder, and ¼ tsp salt. Mix well.
  3. Add the softened butter (¾ cup) to the dry ingredients. Use your fingers or a pastry cutter to blend until the mixture resembles coarse crumbs with some pea-sized pieces.
  4. Press about two-thirds of this mixture firmly into the bottom of the prepared pan to form an even crust layer. Bake for 12-15 minutes until lightly golden.
  5. While the crust bakes, toss 4 cups sliced strawberries with ⅔ cup granulated sugar, 2 tbsp cornstarch, 1 tbsp lemon juice, and 1 tsp vanilla extract in a medium bowl. Let sit for 10 minutes.
  6. Pour the strawberry filling evenly over the prebaked crust. Spread gently to cover all areas.
  7. Crumble the reserved oat mixture over the strawberry layer in even clumps.
  8. Bake for another 35-40 minutes until the topping is golden brown and the filling is bubbly. Tent with foil if topping browns too fast.
  9. Let the bars cool completely in the pan on a wire rack to set the filling and keep the topping crisp.
  10. Cut into approximately 12 squares and serve warm or at room temperature.
