These firecracker hot dogs wrapped in crispy bacon and topped with a spicy kick sauce deliver bold, smoky, and spicy flavors perfect for quick weeknight dinners or backyard barbecues.

Ingredients

Scale
  • 8 beef or pork hot dogs (preferably Nathan’s Famous)
  • 8 strips thick-cut bacon, chilled
  • ¼ cup mayonnaise (Duke’s or Hellmann’s recommended)
  • 2 tablespoons Sriracha or favorite hot chili sauce (adjust to taste)
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 teaspoon lime juice (freshly squeezed)
  • Optional toppings: chopped green onions, shredded cheddar cheese, pickled jalapeños, fresh cilantro leaves
  • 8 soft hot dog buns (brioche or classic white buns)

Instructions

  1. Prepare the Spicy Kick Sauce: In a small mixing bowl, combine ¼ cup mayonnaise, 2 tablespoons Sriracha, 1 teaspoon smoked paprika, ½ teaspoon garlic powder, ½ teaspoon onion powder, and 1 teaspoon lime juice. Whisk until smooth. Adjust heat by adding more Sriracha if desired. Set aside.
  2. Wrap the Hot Dogs: Lay each hot dog on a clean surface. Wrap one strip of chilled thick-cut bacon tightly around each hot dog, spiraling from one end to the other. Secure with a toothpick if needed.
  3. Cook the Bacon-Wrapped Hot Dogs: Heat a cast iron skillet over medium heat. Place wrapped hot dogs seam side down and cook for 5-6 minutes, turning every 2 minutes to crisp all sides evenly. Cook for a total of 12-15 minutes until bacon is golden and crispy.
  4. Warm the Buns: While hot dogs cook, lightly toast the buns in another pan or oven for 2-3 minutes until golden and warm.
  5. Assemble Your Firecracker Hot Dogs: Place each bacon-wrapped hot dog inside a toasted bun. Generously spread the spicy kick sauce on top. Add optional toppings like shredded cheddar, pickled jalapeños, green onions, or fresh cilantro.
  6. Serve Immediately: Enjoy hot off the pan with crispy bacon and fresh spicy sauce. Serve with sides like crispy fries or coleslaw.

Notes

Chill bacon before wrapping for easier handling. Cook over medium heat to avoid burning bacon while ensuring hot dogs cook through. Turn frequently for even crisping. Toast buns lightly to prevent sogginess. Make spicy sauce ahead and chill for better flavor melding. Remove toothpicks before serving. For oven baking, bake at 400°F for 20-25 minutes, turning halfway.
