  • 1 medium cucumber, thinly sliced (English cucumber recommended)
  • 1012 fresh mint sprigs, washed and gently bruised
  • 1 gallon (3.8 liters) filtered water
  • 1 small lemon, thinly sliced (optional)
  • Ice cubes, as needed for serving
  • 12 teaspoons honey or agave syrup (optional sweetener)

Instructions

  1. Rinse cucumber and lemon thoroughly. Thinly slice cucumber into rounds about 1/8 inch (3 mm) thick. Slice lemon similarly if using.
  2. Rinse fresh mint leaves and gently pat dry. Bruise 10-12 sprigs lightly by pressing with the back of a wooden spoon or muddler to release oils.
  3. In a large pitcher, add cucumber slices, lemon slices, and bruised mint leaves. Stir in 1-2 teaspoons of honey or agave syrup if using.
  4. Pour 1 gallon (3.8 liters) of filtered cold water over the ingredients.
  5. Cover the pitcher and refrigerate for at least 2 hours, up to 6 hours for stronger flavor. Avoid infusing longer to prevent bitterness.
  6. Before serving, gently stir the water. Serve over ice cubes and garnish with a mint sprig or cucumber slice.

Notes

Do not over-infuse beyond 6 hours to avoid bitterness. Bruise mint leaves gently to release oils without crushing. Use cold filtered water for best flavor. Thin slices of cucumber and lemon infuse flavor faster. Adjust sweetness to taste. Store covered in refrigerator up to 24 hours; strain solids for longer storage up to 2 days.
