  • 2 tablespoons (30 ml) honey or maple syrup
  • 1 cup (150 g) mixed berries (blueberries, raspberries, strawberries), fresh or frozen
  • 3/4 cup (90 g) crunchy granola
  • 1 tablespoon (15 g) chia seeds (optional)
  • 1 teaspoon (5 ml) vanilla extract (optional, if using plain yogurt)
  • Optional toppings: shredded coconut, chopped nuts (almonds or walnuts), mini chocolate chips

Instructions

  1. Mix the Yogurt Base (5 minutes): In a medium bowl, combine 2 cups (480 ml) of Greek yogurt with 2 tablespoons (30 ml) honey or maple syrup and 1 teaspoon (5 ml) vanilla extract if using plain yogurt. Stir until smooth and evenly sweetened.
  2. Prepare the Baking Sheet (2 minutes): Line your baking sheet (~9×9 inches / 23×23 cm) with parchment paper or a silicone baking mat to keep the yogurt from sticking.
  3. Spread the Yogurt (3 minutes): Pour the yogurt mixture onto the lined tray and spread it evenly to about 1/4-inch (6 mm) thickness using an offset spatula or the back of a spoon. Aim for a consistent layer so it freezes uniformly.
  4. Add the Toppings (5 minutes): Sprinkle 1 cup (150 g) mixed berries evenly over the yogurt, pressing them in lightly so they stick as the yogurt freezes. Next, scatter 3/4 cup (90 g) crunchy granola and 1 tablespoon (15 g) chia seeds on top. Add any optional toppings if desired.
  5. Freeze (4 hours minimum): Place the tray in the freezer uncovered for at least 4 hours or until the yogurt is fully frozen and firm to the touch.
  6. Break into Pieces (2 minutes): Remove from the freezer. Lift the parchment paper to release the yogurt bark from the tray, then break into rustic pieces with your hands or a sharp knife.
  7. Serve or Store: Enjoy immediately or store in an airtight container in the freezer for up to 2 weeks.

Use full-fat Greek yogurt for creaminess and better texture. Adjust sweetener to taste. Toast granola lightly before adding for extra flavor.
