A quick and easy grilled chicken recipe topped with fresh tomatoes, mozzarella, basil, and a homemade balsamic glaze. Perfect for weeknight dinners or summer barbecues.

  • 4 boneless, skinless chicken breasts (about 6 ounces each)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried Italian seasoning
  • Salt and freshly ground black pepper, to taste
  • 2 large ripe tomatoes, sliced
  • 8 ounces fresh mozzarella, sliced
  • 1 cup fresh basil leaves
  • ½ cup balsamic vinegar
  • 1 tablespoon honey or brown sugar

Instructions

  1. In a mixing bowl, combine olive oil, garlic powder, Italian seasoning, salt, and pepper. Rub the mixture all over the chicken breasts and let sit at room temperature for 10 minutes.
  2. Pour balsamic vinegar and honey into a small saucepan. Bring to a gentle boil over medium heat, then reduce to low and simmer, stirring occasionally, until thickened (about 10-15 minutes). Remove from heat and let cool slightly.
  3. Preheat grill or grill pan to medium-high heat (about 400°F). Clean and oil grates.
  4. Grill chicken breasts for 6-7 minutes per side until internal temperature reaches 165°F or juices run clear. Avoid pressing down on chicken.
  5. While chicken grills, slice tomatoes and mozzarella into ¼-inch thick rounds. Wash and pat dry basil leaves.
  6. Transfer grilled chicken to serving plate. Layer tomato slices, mozzarella, and basil leaves on each breast.
  7. Drizzle balsamic glaze generously over the assembled chicken caprese.
  8. Serve immediately while warm with your favorite sides.

Notes

Let chicken rest 5 minutes after grilling to keep it juicy. If glaze thickens too much, gently warm before drizzling. Use ripe tomatoes and fresh mozzarella for best flavor. A meat thermometer helps ensure perfect doneness.
