A refreshing and fun summer snack featuring thick watermelon slices topped with creamy yogurt drizzle and crunchy granola, perfect for light gatherings and quick treats.

Ingredients

Scale
  • 1 medium seedless watermelon, cut into 1-inch thick rounds
  • 1 cup plain full-fat Greek yogurt
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup honey-toasted granola (with oats, nuts, and seeds)
  • Fresh mint leaves (optional, for garnish)
  • Optional berries such as blueberries or sliced strawberries (for extra color and flavor)

Instructions

  1. Rinse the watermelon and pat dry. Slice crosswise into 1-inch thick rounds to serve as pizza bases.
  2. In a mixing bowl, whisk together Greek yogurt, honey, and vanilla extract until smooth and creamy. Add a teaspoon of water or milk if too thick.
  3. Arrange watermelon rounds on a serving platter. Cut into halves or quarters if desired.
  4. Drizzle the yogurt mixture generously over each watermelon slice.
  5. Sprinkle about 1 tablespoon of granola on top of each slice.
  6. Garnish with fresh mint leaves and optional berries.
  7. Serve immediately to keep granola crunchy and watermelon juicy.

Notes

Keep watermelon slices, yogurt drizzle, and granola separate until just before serving to maintain crunch and freshness. Adjust yogurt drizzle consistency with a little water or milk if needed. Add granola last minute to avoid sogginess. Optional toppings include fresh mint, berries, nuts, or a drizzle of local honey.
