  • 4 cups watermelon, cubed into bite-size pieces
  • 1 cup feta cheese, crumbled
  • 1/4 cup fresh mint leaves, finely chopped
  • Juice of 1 lime
  • 1 tablespoon honey or agave nectar (optional)
  • 12 tablespoons extra virgin olive oil
  • Freshly ground black pepper, to taste
  • Pinch of sea salt (optional)

Instructions

  1. Cut about 4 cups of watermelon into bite-sized cubes (about 1-inch pieces), removing seeds if present.
  2. Rinse fresh mint leaves, pat dry, remove from stems, and finely chop about 1/4 cup.
  3. Measure and crumble 1 cup of feta cheese into small, fluffy pieces.
  4. In a small bowl, whisk together lime juice, honey (or agave nectar), extra virgin olive oil, sea salt, and freshly ground black pepper to taste.
  5. In a large mixing bowl, gently toss the watermelon cubes, chopped mint, and crumbled feta.
  6. Pour the dressing over the salad and stir carefully to coat evenly without breaking the watermelon pieces.
  7. Refrigerate the salad for 10-15 minutes before serving for best flavor, or serve immediately if short on time.

Notes

Use ripe watermelon for best sweetness. Be gentle when mixing to avoid mashing the watermelon. Chill the salad before serving to meld flavors. Optional substitutions include goat cheese or dairy-free cheese alternatives. Add cucumber or red onion for extra crunch. Drain excess watermelon juice if too watery.
