  • 3 large eggs, room temperature
  • 2 tsp vanilla extract
  • 1 cup (125g) all-purpose flour (or almond flour for gluten-free)
  • 3/4 cup (75g) unsweetened cocoa powder, sifted
  • 1/2 tsp salt
  • 1/2 cup (120ml) stout beer (e.g., Guinness)
  • 1 cup (175g) bittersweet or semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×9-inch pan or line it with parchment paper.
  2. In a large bowl, whisk together the melted butter, granulated sugar, and brown sugar until smooth and shiny, about 2-3 minutes.
  3. Add the eggs one at a time, whisking well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, sift together the flour, cocoa powder, and salt.
  5. Pour the dry ingredients into the wet mixture in two additions, folding gently with a rubber spatula. Do not overmix.
  6. Slowly pour in the stout beer and fold gently until just combined.
  7. Fold in the chocolate chips carefully, keeping the batter airy.
  8. Pour the batter into the prepared pan, smoothing the top.
  9. Bake for 30 to 35 minutes or until edges are set but the center jiggles slightly when shaken.
  10. Cool completely in the pan on a wire rack before slicing.

Notes

Do not overbake to maintain a gooey center. Use room temperature eggs for better emulsification. For gluten-free, substitute flour with almond or oat flour. Stout beer intensifies chocolate flavor; brewed coffee can be used as a non-alcoholic substitute. Adding nuts or spices can create tasty variations.
