Perfect Baked Brie with Raspberry Jam

A quick and easy appetizer featuring a golden, flaky puff pastry wrapped wheel of creamy brie topped with sweet raspberry jam, perfect for entertaining and crowd-pleasing.

Ingredients

  • 1 whole wheel of brie cheese (about 8 ounces / 225 grams), room temperature
  • 1 sheet puff pastry (about 8x8 inches / 20x20 cm), thawed if frozen
  • 3 tablespoons raspberry jam (seedless preferred)
  • 1 large egg, beaten (for egg wash)
  • Optional toppings: chopped pecans or walnuts, fresh rosemary or thyme sprigs
  • Flour for dusting work surface

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Lightly dust work surface with flour. Roll out puff pastry slightly to about 10×10 inches (25×25 cm) if too thick.
  3. Place brie in center of pastry. Spread raspberry jam evenly over top of brie using back of a spoon. Sprinkle nuts if using.
  4. Fold pastry up and over brie, pinching edges to seal tightly. Trim excess pastry for a neat package. Flip seam side down on baking sheet.
  5. Brush entire pastry surface with beaten egg wash.
  6. Score the pastry top with shallow cuts or decorative patterns using a sharp knife to allow steam to escape.
  7. Bake for 20–25 minutes until pastry is puffed and golden brown. Check at 18 minutes if oven runs hot.
  8. Let baked brie rest for 5 minutes before serving to set slightly.

Notes

Let brie come to room temperature before baking for best melting. Use egg wash for a golden, glossy crust. Score pastry to prevent sogginess and allow steam to escape. Can be assembled up to 24 hours ahead and refrigerated before baking.
