Instructions

  1. Sift almond flour and powdered sugar together into a large bowl and set aside.
  2. In a clean, grease-free bowl, beat egg whites on medium speed until foamy (1-2 minutes). Gradually add granulated sugar while increasing to high speed and beat until stiff, glossy peaks form (5-7 minutes).
  3. Fold sifted almond flour mixture into the meringue in three additions using a flexible spatula. Fold gently but thoroughly until batter flows slowly off the spatula in a thick ribbon (about 50-60 folds).
  4. Fold in vanilla extract and any gel food coloring.
  5. Transfer batter to a piping bag fitted with a ½-inch round tip. Pipe 1.5-inch circles onto baking sheets lined with parchment paper or silicone mats, spacing about 1 inch apart. Tap tray firmly twice to release air bubbles.
  6. Let piped shells rest at room temperature for 30-60 minutes until a skin forms and batter does not stick to touch.
  7. Preheat oven to 285°F (140°C). Bake one tray at a time for 15-18 minutes, rotating halfway through. Shells should be dry and crisp on top but soft inside.
