  • 4 large lobster tails (68 ounces each), thawed if frozen
  • 1/2 cup (113g) unsalted butter, melted
  • 2 tablespoons fresh lemon juice
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, finely chopped
  • 1/2 teaspoon smoked paprika (optional)
  • Salt and freshly ground black pepper, to taste
  • 1 tablespoon olive oil

Instructions

  1. Prep the lobster tails (10 minutes): Using kitchen shears, carefully cut down the top of the shell lengthwise, stopping just before the tail fin. Pry the shell open slightly and gently lift the lobster meat, keeping it attached at the base. Rest the meat on top of the shell so it’s exposed but still supported.
  2. Season and oil (5 minutes): Brush the exposed lobster meat and shell with olive oil. Sprinkle lightly with salt, pepper, and smoked paprika if using.
  3. Preheat the grill (5-10 minutes): Heat your grill to medium-high, about 400°F (204°C). If using charcoal, wait until coals are covered with white ash.
  4. Grill the lobster tails (8-10 minutes): Place lobster tails meat-side down on the grill. Cook for 4-5 minutes until grill marks appear and the meat is opaque on the outside. Flip carefully and grill shell-side down for another 4-5 minutes until the internal temperature reaches 140°F (60°C). The meat should feel firm but springy.
  5. Make the lemon butter sauce (5 minutes): While lobster is grilling, melt butter in a small saucepan or microwave-safe bowl. Stir in minced garlic and lemon juice. Warm gently until fragrant but not boiling. Remove from heat and stir in fresh parsley.
  6. Serve immediately: Drizzle lemon butter sauce generously over the grilled lobster tails. Garnish with extra parsley or lemon wedges if desired.

Notes

Avoid overcooking lobster to prevent rubbery texture. Use an instant-read thermometer to check for an internal temperature of 140°F (60°C). Score the lobster shell to help heat penetrate evenly. Baste with lemon butter during the last minute on the grill to keep meat moist. Let lobster rest for a couple of minutes after grilling to lock in juices.
