Ingredients

  • Salt (a pinch to season the eggs)
  • Freshly ground black pepper (to taste)
  • Cooking spray or oil (for greasing the heart-shaped molds; avocado oil recommended)
  • Optional: Chopped fresh chives or parsley (for garnish)
  • Optional: Shredded cheese (cheddar or mozzarella to sprinkle on eggs before cooking)

Instructions

  1. Prep your ingredients and equipment: Take the eggs out of the fridge to warm up a bit. Butter your bread slices lightly on both sides. Grease your heart-shaped molds with cooking spray or a bit of oil to prevent sticking.
  2. Heat the skillet: Place your non-stick pan over medium heat. Add about 1 tablespoon of butter and let it melt, swirling to coat the pan evenly.
  3. Toast the bread in the pan: Place the buttered bread slices in the pan and cook until golden and crisp on one side (about 2 minutes), then flip and cook the other side just until it starts to turn golden but not fully toasted. Remove from pan and set aside.
  4. Place the heart-shaped molds in the pan: Reduce heat to low-medium. Put the molds in the pan, making sure they sit flat.
  5. Crack one egg into each mold: Gently crack an egg into each heart mold, being careful not to break the yolk. Season lightly with salt and pepper. If using cheese, sprinkle it over the eggs now.
  6. Cook the eggs: Cover the pan with a lid to help the eggs cook evenly. Keep an eye on the yolks; cook until whites are fully set but yolks are still soft (4-6 minutes) or longer if you prefer firm yolks.
  7. Remove the molds carefully: Using heat-safe tongs or a spatula, carefully lift the molds straight up. If the eggs stick, gently loosen the edges with your spatula before lifting.
  8. Assemble and serve: Place each heart-shaped egg atop a slice of toasted bread. Add any garnishes like chives, avocado slices, or tomatoes. Serve immediately while warm.
