Perfect Honey Mustard Glazed Ham Recipe with Pineapple Brown Sugar Crust

A quick and easy honey mustard glazed ham with a sweet pineapple brown sugar crust that caramelizes beautifully, perfect for holidays and gatherings.

  • 810 pounds bone-in ham, pre-cooked, spiral sliced if possible
  • ⅓ cup honey (80 ml), preferably raw or wildflower
  • ¼ cup whole grain mustard (60 ml)
  • 2 tablespoons Dijon mustard (30 ml)
  • ½ cup brown sugar (100 g), packed, preferably dark brown sugar
  • 1 can pineapple rings (about 8 rings), drained (reserve juice)
  • ½ teaspoon ground cloves (1 g)
  • ¼ teaspoon ground cinnamon (0.5 g), optional
  • Freshly ground black pepper, to taste
  • 2 tablespoons butter (28 g), melted

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. In a medium bowl, whisk together honey, whole grain mustard, Dijon mustard, melted butter, brown sugar, ground cloves, and cinnamon until smooth and spreadable.
  3. Lightly score the surface of the ham in a diamond pattern about ½ inch (1.25 cm) apart.
  4. Place the ham on a roasting rack in a pan, cut side down if spiral sliced. Brush a generous layer of glaze all over the ham, making sure to get into the scored lines.
  5. Arrange pineapple rings on top of the ham, securing them with toothpicks if needed. Brush a little glaze on the pineapples for extra shine.
  6. Cover loosely with aluminum foil and bake for about 1 hour (approximately 10 minutes per pound or 22 minutes per kg), basting every 15 minutes with reserved glaze and pan juices.
  7. Remove foil during the last 15 minutes of baking to let the crust caramelize and become sticky and golden. Watch carefully to avoid burning.
  8. Check internal temperature aiming for 140°F (60°C) if pre-cooked ham. Let rest for 10 minutes after removing from the oven.
  9. Slice between pineapple rings and serve with extra glaze drizzled on top if desired.

Notes

Reserve pineapple juice and add a splash to the pan halfway through cooking for extra moisture and flavor. Remove foil during last 15 minutes to caramelize glaze without burning. Let ham rest 10 minutes before slicing to keep it juicy. Use a digital thermometer to avoid overcooking.
