  • 4 skin-on Norwegian salmon fillets (about 6 ounces / 170 grams each)
  • 2 tablespoons extra virgin olive oil
  • Salt and black pepper to season
  • 2 tablespoons fresh dill, finely chopped
  • ½ cup (120 ml) sour cream
  • 2 tablespoons mayonnaise
  • 1 tablespoon fresh lemon juice
  • 1 small garlic clove, minced
  • Optional: pinch of smoked paprika or cayenne pepper

Instructions

  1. Pat the salmon fillets dry with paper towels. Season both sides generously with salt and black pepper. Let rest at room temperature for about 10 minutes.
  2. In a mixing bowl, combine sour cream, mayonnaise, chopped dill, lemon juice, and minced garlic. Stir until smooth and well-blended. Add a pinch of salt or smoked paprika if desired. Chill the sauce in the fridge.
  3. Heat a non-stick or stainless steel skillet over medium-high heat. Add olive oil and heat until shimmering but not smoking, about 1-2 minutes.
  4. Place salmon fillets skin-side down in the hot oil. Press gently with a spatula for about 10 seconds to prevent curling. Cook without moving for 4-5 minutes until skin is crisp and golden brown.
  5. Flip the fillets carefully and cook on the flesh side for another 2-3 minutes depending on thickness. The salmon should be opaque and flake easily but remain moist inside.
  6. Remove salmon from the pan and let rest for 1-2 minutes. Plate the fillets and spoon the creamy dill sauce generously over the top.

Notes

Pat salmon dry before cooking to ensure crispy skin. Do not overcrowd the pan; cook in batches if necessary. Let salmon rest after cooking to redistribute juices. Sauce can be made ahead and chilled. For dairy-free, substitute sour cream and mayo with plant-based alternatives. Fresh dill is preferred over dried for best flavor.
