A light, bubbly pink champagne cocktail with muddled fresh strawberries and a splash of lemon juice, perfect for summer parties and gatherings.

  • 1 bottle (750 ml) pink champagne or sparkling wine (dry rosé recommended)
  • 1 cup fresh strawberries, hulled and sliced
  • 1 tablespoon fresh lemon juice
  • 12 tablespoons simple syrup (optional)
  • A few sprigs fresh mint leaves for garnish
  • Ice cubes (optional)

Instructions

  1. Chill the bottle of pink champagne in the fridge for at least 3 hours before serving.
  2. Hull and slice about 1 cup of fresh strawberries and place them in a small bowl or mixing pitcher.
  3. Gently muddle the strawberries with a muddler or wooden spoon until they release their juices but still hold some shape (about 30 seconds).
  4. Stir in 1 tablespoon of fresh lemon juice and 1-2 tablespoons of simple syrup, depending on taste and strawberry sweetness.
  5. Add a few muddled strawberry pieces and a couple of mint leaves to each champagne flute or glass. Add ice cubes if desired.
  6. Slowly pour the chilled pink champagne over the muddled strawberry mixture, filling each glass about three-quarters full.
  7. Garnish with a fresh strawberry on the rim or a sprig of mint and serve immediately.

Notes

Do not over-muddle strawberries to avoid cloudiness and excessive sweetness. Chill champagne and glasses for best fizz. Pour champagne slowly to reduce foam. Prepare strawberry mixture ahead but add champagne just before serving to preserve bubbles. Frozen strawberries can be used if thawed and drained. Substitute lemon juice with lime juice for a citrus twist. Simple syrup is optional depending on strawberry sweetness.
