Refreshing Raspberry Peach Sparkling Refresher

A quick and easy sparkling drink combining fresh raspberries and peaches with a hint of honey and lemon juice, perfect for cooling off on hot summer days.

Ingredients

  • 1 cup fresh raspberries (125g), fresh or thawed if frozen
  • 1 large ripe peach, peeled and chopped (about 1 cup/150g), fresh or frozen/canned in juice
  • 12 tablespoons honey or agave syrup, to taste
  • 1 tablespoon fresh lemon juice
  • 2 cups (16 fl oz / 480 ml) chilled sparkling water, plain or lightly flavored
  • A small handful fresh mint leaves, for muddling and garnish (optional)
  • Ice cubes, as needed

Instructions

  1. Wash and dry the raspberries and peach. Peel and chop the peach into small chunks for easier blending. (10 minutes)
  2. Add raspberries and peach chunks to the blender. Add honey or agave syrup and fresh lemon juice. Blend on high until smooth, about 30 seconds. If you prefer a smoother texture, strain the purée through a fine mesh sieve into a bowl, pressing with a spoon to extract all the juice. (5 minutes)
  3. Place fresh mint leaves in your serving pitcher or individual glasses. Use a muddler or wooden spoon to press gently—just enough to release the oils without tearing the leaves into bits. (2 minutes)
  4. Pour the fruit purée into the pitcher with muddled mint. Slowly add chilled sparkling water, stirring gently to mix but not lose too much fizz. (3 minutes)
  5. Taste the refresher. If you want it sweeter, add a bit more honey or syrup and stir gently. Add plenty of ice cubes to keep it chilled and refreshing. (2 minutes)
  6. Pour into glasses with extra ice and garnish with a sprig of fresh mint or a few whole raspberries. (2 minutes)

Notes

Keep sparkling water and glasses well chilled to preserve fizz. Serve purée and sparkling water separately if fizz fades too quickly and combine just before serving. Avoid over-muddling mint to prevent bitterness. Fruit ripeness affects flavor quality. Strain purée for a smoother texture if desired.
