A quick and easy sparkling cocktail combining fresh raspberries, prosecco, lemon juice, and simple syrup for a refreshing summer drink with a perfect balance of sweetness and fizz.

Ingredients

  • 1 cup (125g) fresh raspberries (frozen can be used if fresh are unavailable)
  • 1 bottle (750ml) extra dry prosecco
  • 2 tablespoons (30ml) fresh lemon juice
  • 2 tablespoons (30ml) simple syrup (equal parts sugar and water dissolved)
  • A handful of mint leaves (optional, for garnish)
  • Ice cubes (optional, for chilling)

Instructions

  1. Rinse 1 cup (125g) of fresh raspberries under cool water and remove any mushy or bruised berries.
  2. Place raspberries in the bottom of a pitcher or large glass and gently muddle with a muddler or the back of a wooden spoon to release juice without pulverizing seeds.
  3. Add 2 tablespoons (30ml) fresh lemon juice and 2 tablespoons (30ml) simple syrup to the muddled berries. Stir gently and adjust sweetness if desired.
  4. Optional: Strain the mixture through a fine mesh sieve into a clean pitcher for a seed-free cocktail, or leave pulp for extra texture.
  5. Slowly pour one bottle (750ml) of chilled prosecco into the berry mixture and stir gently to combine without losing bubbles.
  6. Serve immediately in flutes or wine glasses over ice cubes if desired. Garnish with fresh mint leaves and whole raspberries.

Notes

Keep prosecco well chilled before mixing to preserve bubbles. Mix prosecco in last to maintain fizz. For seed-free drink, strain berry mixture. Adjust sweetness with simple syrup to taste. Frozen raspberries can be used but thaw and drain excess liquid first. Variations include substituting berries, adding elderflower liqueur, or making a non-alcoholic version with sparkling water.
