Refreshing Sparkling Lavender Lemonade

A quick and easy homemade floral drink combining the crisp zing of fresh lemons with the gentle aroma of culinary lavender and bubbly club soda, perfect for outdoor gatherings or a refreshing treat.

  • 6 medium fresh lemons (for about 1 cup fresh lemon juice)
  • 2 tablespoons dried culinary lavender buds (food-grade)
  • 1 cup granulated sugar (200 g)
  • 1 cup water (for lavender syrup)
  • 3 cups cold water (for mixing)
  • 4 cups club soda or sparkling water (1 liter), chilled
  • Ice cubes
  • A handful of edible flowers (pansies, violets, nasturtiums) for garnish
  • Optional: fresh mint leaves for garnish

Instructions

  1. Make the Lavender Syrup (10 minutes): In a medium saucepan, combine 1 cup granulated sugar, 1 cup water, and 2 tablespoons dried culinary lavender. Bring to a gentle boil over medium heat, stirring frequently until sugar dissolves. Reduce heat and simmer for 3 minutes to infuse lavender flavor.
  2. Strain the Syrup: Remove from heat and strain syrup through a fine mesh strainer into a bowl or pitcher, pressing gently on lavender buds to extract flavor but leaving residue behind. Let cool to room temperature (15-20 minutes).
  3. Juice the Lemons (5 minutes): Juice about 6 medium lemons to yield approximately 1 cup fresh lemon juice. Strain to remove seeds and pulp.
  4. Combine Ingredients: In a large pitcher, mix cooled lavender syrup with fresh lemon juice. Add 3 cups cold water and stir well. Adjust sweetness or tartness by adding more water or dissolved sugar if desired.
  5. Add Sparkle and Chill: Just before serving, gently stir in 4 cups chilled club soda or sparkling water to keep fizz. Add plenty of ice cubes.
  6. Garnish and Serve: Float edible flowers and optional fresh mint leaves on top. Pour into glasses and enjoy immediately.

Notes

Avoid over-steeping lavender to prevent bitterness; simmer dried lavender for 3 minutes and strain immediately. Add sparkling water only at the end to preserve fizz. Use organic, pesticide-free edible flowers and rinse gently before use. Adjust sweetness after mixing to taste. Fresh lavender can be used but steep only 30-60 seconds.
