A quick and easy game day snack that transforms leftover chicken wings into a flavorful nacho masterpiece with crispy chips, melted cheese, and fresh toppings.

Ingredients

  • Leftover chicken wings, roughly chopped (bone removed if preferred)
  • Tortilla chips, sturdy and thick (e.g., Tostitos Restaurant Style)
  • Shredded cheese blend of sharp cheddar and Monterey Jack
  • Jalapeños, sliced fresh or pickled
  • Green onions, thinly sliced
  • Diced tomatoes, fresh
  • Black beans, drained and rinsed (optional)
  • Sour cream or ranch dressing for drizzling (e.g., Hidden Valley Ranch)
  • Fresh cilantro, chopped (optional)
  • Olive oil, light drizzle (optional)
  • Seasonings: smoked paprika, garlic powder, black pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Remove meat from leftover chicken wings and roughly chop into bite-sized pieces. Pat dry if wings are saucy.
  3. Toss chopped wings with smoked paprika, garlic powder, and black pepper.
  4. Spread a single, even layer of tortilla chips on a baking sheet or oven-safe skillet.
  5. Scatter chopped wings evenly over the chips, then sprinkle black beans (if using), jalapeños, diced tomatoes, and half the shredded cheese.
  6. Sprinkle the remaining shredded cheese over the top.
  7. Bake for 8-12 minutes until cheese is melted, bubbly, and chips at edges turn golden brown. Watch closely after 8 minutes to avoid burning.
  8. While baking, slice green onions and chop cilantro if using.
  9. Remove from oven and drizzle sour cream or ranch dressing over the top in zigzags.
  10. Sprinkle green onions and fresh cilantro for garnish.
  11. Serve immediately while hot and melty.

Notes

Pat wings dry if saucy to prevent soggy chips. Use a mix of sharp cheddar and Monterey Jack cheese for best melt and flavor. Avoid overcrowding chips to keep them crispy. Check nachos at 8 minutes to prevent burning. Fresh toppings can be prepped while baking. Leftovers store well in fridge up to 2 days; reheat in oven for best texture.
