Soft, melt-in-your-mouth sugar cookies with charming royal icing messages, perfect for Valentine’s Day or any cozy occasion. These cookies combine nostalgic comfort with a tender crumb thanks to cream cheese in the dough.

Ingredients

Scale
  • 2 ½ cups (312g) all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ¾ cup (170g) unsalted butter, softened
  • ½ cup (120g) cream cheese, softened
  • 1 cup (200g) granulated sugar
  • 1 large egg, room temperature
  • 1 ½ teaspoons pure vanilla extract
  • 2 cups (240g) powdered sugar, sifted
  • 23 tablespoons milk or water
  • 1 tablespoon light corn syrup
  • ½ teaspoon vanilla extract or almond extract (optional)
  • Food coloring gels (pink, red, purple)
  • Fine-tipped piping bags or squeeze bottles

Instructions

  1. Soften the butter and cream cheese until soft but not melted. Sift together flour, baking powder, and salt.
  2. Beat butter, cream cheese, and sugar on medium speed until fluffy and pale, about 3-4 minutes.
  3. Add egg and vanilla extract; beat until combined and glossy.
  4. Gradually add sifted dry ingredients on low speed until dough forms. Chill dough 10 minutes if too sticky.
  5. Roll dough to ¼ inch thickness on lightly floured surface. Cut with heart-shaped cookie cutters and place on lined baking sheets 2 inches apart.
  6. Bake at 350°F (175°C) for 8-10 minutes until edges are barely golden but centers remain soft.
  7. Cool cookies completely on a rack before decorating.
  8. Mix powdered sugar, corn syrup, milk (or water), and extract until smooth. Adjust consistency as needed and divide into bowls to tint with food coloring gels.
  9. Pipe sweet messages on cooled cookies using piping bags or squeeze bottles. Let icing dry 1-2 hours at room temperature before storing.

Notes

Use room temperature ingredients for best texture. Avoid overmixing dough to keep cookies soft. Chill dough if sticky for easier rolling. Pipe icing on fully cooled cookies to prevent melting. Practice piping on parchment paper if needed. Store cookies in airtight container up to 4 days or freeze undecorated cookies up to 3 months.
