Instructions

  1. Preheat your oven to 375°F (190°C). Position the rack in the center of the oven. Grease your baking dish lightly with butter or non-stick spray.
  2. Make the apple filling: In a large bowl, combine the sliced apples, brown sugar, bourbon, lemon juice, vanilla, cinnamon, nutmeg, and cornstarch. Toss until well coated. Let sit for 5-10 minutes.
  3. Make the oat crumble: In a medium bowl, whisk together the flour, oats, brown sugar, salt, and cinnamon. Add the cold butter cubes. Using a pastry cutter, fork, or your fingertips, work the butter into the dry ingredients until the mixture looks like coarse crumbs with some pea-sized butter pieces remaining. Do not overwork.
  4. Assemble the crisp: Pour the apple mixture into the prepared baking dish and spread evenly. Sprinkle the oat crumble over the top, covering the apples completely. Do not press down.
  5. Bake for 35-40 minutes, or until the topping is golden brown and the apple filling is bubbling around the edges. If the topping browns too quickly, tent loosely with foil for the remaining time.
  6. Let the crisp rest for at least 10-15 minutes before serving to allow the filling to thicken.
