Best Brown Sugar Bourbon Bacon-Wrapped Smokies

Sweet, smoky, and salty bacon-wrapped smoked sausages glazed with brown sugar and bourbon. An easy, crowd-pleasing appetizer perfect for game day or any party.

Ingredients

  • Little Smoked Sausages (14 oz package)
  • Thick-Cut Bacon (1 lb)
  • Brown Sugar (1 cup, packed)
  • Bourbon (2 tablespoons)
  • Optional: Chopped green onions, flaky sea salt, extra glaze for garnish

Instructions

  1. Preheat your oven to 375°F (190°C). Position the rack in the center of the oven. Line a baking sheet with parchment paper or foil and place a wire rack on top.
  2. Cut the bacon strips into thirds. Each standard strip will give you three pieces, each about 2 to 3 inches long.
  3. Wrap each sausage with one piece of bacon, overlapping slightly at the ends. Secure with a toothpick pushed straight through the center. Place on the wire rack with the toothpick pointing up or angled outward. Repeat until all sausages are wrapped.
  4. In a small bowl, combine the packed brown sugar and bourbon. Stir until it forms a thick, grainy paste. If too thick, add a teaspoon more bourbon.
  5. Using a spoon or pastry brush, dab a generous amount of the brown sugar mixture onto the top of each wrapped sausage. Press it on gently so it sticks.
  6. Bake for 25 to 30 minutes. At the 15-minute mark, rotate the pan for even cooking. The bacon should be crispy and the brown sugar bubbly and dark amber.
  7. Let them rest on the wire rack for 5 minutes. The glaze will firm up slightly as it cools.
  8. Remove the toothpicks if desired, or leave them in for easy grabbing at a party.
  9. Transfer to a serving platter. Optionally sprinkle with chopped green onions or a tiny pinch of flaky sea salt before serving.

Notes

Use thick-cut bacon for best results. Do not overcrowd the pan; leave about half an inch between each wrapped smokie. For make-ahead, assemble without glaze up to 24 hours in advance and refrigerate. Double the batch for a crowd. For air fryer adaptation, cook at 375°F for 10-12 minutes, shaking halfway through.
