  • 1/4 cup (60ml) milk
  • 1 large egg, lightly beaten
  • 1/4 cup (60ml) buffalo hot sauce (plus more for brushing)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon celery salt
  • 2 tablespoons fresh parsley, finely chopped (optional, for garnish)
  • 1/2 cup (120g) sour cream
  • 1/4 cup (60g) mayonnaise
  • 1/2 cup (60g) blue cheese crumbles
  • 1 tablespoon lemon juice, fresh squeezed
  • 1/2 teaspoon Worcestershire sauce
  • 1/4 teaspoon garlic powder
  • Salt and black pepper to taste

Instructions

  1. Make the panade: In a large mixing bowl, combine panko breadcrumbs and milk. Let sit for 5 minutes until the breadcrumbs have absorbed the milk and formed a paste.
  2. Mix the meatball ingredients: Add ground chicken, beaten egg, buffalo sauce, garlic powder, onion powder, salt, black pepper, and celery salt to the bowl with the panade. Using your hands, gently mix until just combined.
  3. Shape the meatballs: Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper. Using a cookie scoop or tablespoon, scoop portions and roll into 1.5-inch balls. Place on prepared baking sheet, spacing about an inch apart.
  4. Bake the meatballs: Bake for 15-18 minutes, until cooked through and lightly golden. Internal temperature should reach 165°F (74°C). Halfway through, rotate the baking sheet.
  5. Make the buffalo sauce: While meatballs bake, warm 1/4 cup buffalo sauce in a small saucepan over low heat.
  6. Coat the meatballs: Transfer baked meatballs to a large bowl. Pour warm buffalo sauce over and gently toss to coat. Let sit for 2-3 minutes.
  7. Make the blue cheese dip: In a medium bowl, combine sour cream, mayonnaise, blue cheese crumbles, lemon juice, Worcestershire sauce, and garlic powder. Mix until well combined. Season with salt and pepper to taste.
  8. Serve: Arrange meatballs on a platter. Sprinkle with fresh parsley if desired. Serve with blue cheese dip on the side or drizzled over the top.

Notes

For best texture, use ground chicken with about 7% fat. If using lean ground chicken, add 1 tablespoon olive oil. Let meatballs rest in sauce for a few minutes to absorb flavor. Blue cheese dip can be made ahead and refrigerated for up to 2 days. For air fryer, cook at 375°F (190°C) for 10-12 minutes.
