This copycat Starbucks pumpkin cream cold brew is better than the original, with a silky, perfectly spiced pumpkin cream that floats on bold cold brew. Quick and easy to make at home with simple ingredients.

Ingredients

Scale
  • 1 cup (240 ml) heavy cream
  • 2 tablespoons (30 ml) pumpkin puree
  • 2 tablespoons (30 ml) maple syrup
  • 1 teaspoon (5 ml) vanilla extract
  • 1/2 teaspoon pumpkin pie spice
  • Pinch of salt
  • 1 cup (240 ml) cold brew coffee per serving
  • Ice cubes

Instructions

  1. Chill your mixing bowl and whisk in the freezer for 5 minutes.
  2. In the chilled bowl, combine heavy cream, pumpkin puree, maple syrup, and vanilla extract. Whisk gently to combine.
  3. Add pumpkin pie spice and salt. Whisk until fully incorporated.
  4. Whip the cream vigorously until soft peaks form (2-3 minutes by hand, 30-45 seconds with a mixer). The cream should be thick enough to coat a spoon but still pourable.
  5. Fill a serving glass with ice cubes. Pour cold brew over the ice, leaving about an inch of space at the top.
  6. Slowly pour the pumpkin cream over the back of a spoon held just above the coffee to help it float.
  7. Serve immediately.

Notes

The pumpkin cream can be made up to 2 hours ahead and stored in the refrigerator. Give it a gentle whisk before using. Do not use pumpkin pie filling; use pure pumpkin puree. For dairy-free, substitute full-fat canned coconut cream. The cream is best used immediately; it will start to sink after about 10 minutes.
