Ingredients

Scale
  • 6 medium apples (about 2.5 pounds or 1.1 kg), peeled, cored, and sliced into ¼-inch thick pieces (Honeycrisp or Granny Smith recommended)
  • ¼ cup (50g) granulated sugar
  • 2 tablespoons (15g) all-purpose flour
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 tablespoon (15ml) fresh lemon juice
  • ½ cup (120ml) salted caramel sauce, divided
  • 1 cup (90g) rolled oats (old-fashioned oats)
  • ½ cup (60g) all-purpose flour (or oat flour for gluten-free)
  • ½ cup (100g) packed light brown sugar
  • ¼ teaspoon salt
  • ½ cup (113g or 1 stick) cold unsalted butter, cut into small cubes
  • ½ teaspoon vanilla extract
  • ¼ cup (60ml) heavy cream (for optional drizzle)
  • 2 tablespoons (28g) unsalted butter (for optional drizzle)
  • ¼ teaspoon flaky sea salt (for optional drizzle)

Instructions

  1. Preheat your oven to 375°F (190°C). Position a rack in the center of the oven. Butter your baking dish lightly.
  2. Make the apple filling: In a large bowl, combine the sliced apples, granulated sugar, flour, cinnamon, nutmeg, and lemon juice. Toss until evenly coated. Let sit for 5 minutes.
  3. Make the oat crumble topping: In a medium bowl, whisk together the rolled oats, flour, brown sugar, and salt. Add the cold butter cubes and vanilla extract. Using a pastry cutter or your fingertips, work the butter into the dry ingredients until the mixture looks like coarse crumbs with some pea-sized butter pieces remaining. Refrigerate while assembling the crisp.
  4. Layer the crisp: Spread the apple mixture evenly in your prepared baking dish. Drizzle half of the salted caramel sauce (about ¼ cup) over the apples. Sprinkle the oat crumble topping over everything in an even layer.
  5. Bake the crisp: Place the dish on a baking sheet. Bake for 35-40 minutes, until the filling is bubbly around the edges and the crumble is deep golden brown. If the crumble is browning too quickly after 25 minutes, tent loosely with foil.
  6. Make the extra caramel drizzle (optional): While the crisp bakes, combine the heavy cream and butter in a small saucepan over medium heat. Stir until the butter melts and the mixture is smooth. Remove from heat and stir in the flaky sea salt. Set aside.
  7. Finish and rest: Remove the crisp from the oven and let it cool on a wire rack for at least 15 minutes. Drizzle with the remaining salted caramel sauce and the optional extra drizzle just before serving.

Notes

Don’t skip the lemon juice—it brightens the flavors. Cold butter is non-negotiable for a crispy crumble. Let the crisp rest for at least 15 minutes after baking to allow the filling to set. For gluten-free, use oat flour and certified gluten-free oats. For vegan, use coconut oil or vegan butter and coconut cream.
