  • 2 large eggs, beaten (room temperature)
  • 1/2 cup all-purpose flour (or gluten-free all-purpose blend)
  • 1 cup panko breadcrumbs (Kikkoman or Ian’s preferred)
  • 1/2 cup finely grated Parmesan cheese (freshly grated)
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons olive oil (for drizzling)
  • 1/2 cup marinara sauce (warmed, for dipping, optional)
  • Fresh basil leaves, chopped (for garnish, optional)
  • Shredded mozzarella cheese (optional, for topping)

Instructions

  1. Salt the eggplant: Place the cubed eggplant in a colander set over a bowl or in the sink. Sprinkle with 1 teaspoon salt and toss to coat. Let it sit for 30 minutes.
  2. Dry the eggplant: After 30 minutes, rinse the eggplant cubes briefly under cold water to remove excess salt. Pat them very dry with paper towels.
  3. Preheat the oven: Set your oven to 425°F (220°C). Line a large baking sheet with parchment paper or a silicone mat. If you have a cooling rack, place it on top of the baking sheet.
  4. Set up the breading station: In the first shallow bowl, add the 1/2 cup flour. In the second bowl, beat the 2 eggs until smooth. In the third bowl, combine the panko breadcrumbs, grated Parmesan, garlic powder, oregano, black pepper, and red pepper flakes (if using). Mix well with a fork.
  5. Coat the eggplant: Take a handful of dried eggplant cubes and toss them in the flour until lightly coated. Shake off any excess. Then dip each floured cube into the beaten egg, letting any excess drip off. Finally, roll it in the breadcrumb mixture, pressing gently so the crumbs stick. Place the coated bite on the prepared baking sheet. Repeat with all the cubes.
  6. Drizzle with oil: Once all the bites are on the sheet, drizzle the 2 tablespoons of olive oil evenly over the top. Toss them gently with your hands or a spatula to distribute the oil, then spread them back into a single layer with space between each bite.
  7. Bake for 15 minutes: Place the baking sheet on the middle rack. Bake for 15 minutes, then remove the sheet from the oven. Use a spatula to flip each bite over.
  8. Bake for another 10-12 minutes: Return the sheet to the oven and bake for an additional 10-12 minutes, until the bites are deep golden brown and crispy all over. If you are adding mozzarella, sprinkle it on during the last 2 minutes of baking.
  9. Cool slightly and serve: Let the bites rest on the baking sheet for 2-3 minutes. Transfer to a serving platter, sprinkle with fresh basil, and serve warm with marinara sauce for dipping.

Notes

Do not skip the salting step—it draws out bitterness and moisture. For extra crunch, use a cooling rack set over the baking sheet. If making ahead, bread the eggplant cubes and refrigerate on the baking sheet for up to 4 hours before baking. To reheat leftovers, place on a baking sheet in a 375°F (190°C) oven for 5-7 minutes—do not microwave.
