Ingredients

Scale
  • 3 lbs chicken wings, separated into drumettes and flats
  • 2 teaspoons baking powder
  • 1 teaspoon kosher salt
  • 1 teaspoon garlic powder
  • ½ teaspoon freshly ground black pepper
  • ½ cup Frank’s RedHot Original Sauce
  • ¼ cup unsalted butter (½ stick, 56 g), melted
  • 1 teaspoon Worcestershire sauce
  • 1 tablespoon honey (optional)
  • ½ cup blue cheese crumbles (75 g)
  • ½ cup sour cream (120 ml)
  • ¼ cup mayonnaise (60 ml)
  • 1 tablespoon freshly squeezed lemon juice
  • ¼ teaspoon garlic powder
  • Salt and black pepper to taste
  • Celery sticks and carrot sticks for serving
  • Fresh chives or parsley, chopped, for garnish (optional)

Instructions

  1. Preheat oven to 425°F (220°C). Line a rimmed baking sheet with foil and place a wire rack on top.
  2. Pat chicken wings completely dry with paper towels.
  3. In a large bowl, whisk together baking powder, salt, garlic powder, and black pepper. Add dried wings and toss until evenly coated.
  4. Arrange wings on the wire rack in a single layer, not touching.
  5. Bake for 45-50 minutes, flipping halfway through, until golden brown and crispy. Internal temperature should reach 165°F (74°C).
  6. While wings bake, combine hot sauce, melted butter, Worcestershire sauce, and honey (if using) in a small saucepan. Warm over low heat, whisking until smooth. Keep warm.
  7. In a mixing bowl, combine blue cheese crumbles, sour cream, mayonnaise, lemon juice, garlic powder, and a pinch of salt and pepper. Stir until well mixed. Cover and refrigerate until serving.
  8. Once wings are out of the oven, transfer to a large bowl. Pour warm buffalo sauce over them and toss gently until evenly coated.
  9. Transfer glazed wings to a serving platter. Sprinkle with chopped chives or parsley if desired. Serve hot with blue cheese dip and celery sticks on the side.

Notes

Pat wings very dry for crispy skin. Do not substitute baking soda for baking powder. Make blue cheese dip at least 30 minutes ahead for best flavor. For extra crispy wings, bake an additional 5-10 minutes if needed.
