A dark, smoky, and velvety black bean and pumpkin chili that’s perfect for cozy nights and Halloween gatherings. It’s healthy, satisfying, and comes together in under an hour with simple pantry ingredients.

  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 1 medium red bell pepper, diced
  • 2 teaspoons ground cumin
  • 1 tablespoon chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper (or more to taste)
  • 2 cans (15 oz each) black beans, drained and rinsed
  • 1 can (15 oz) pumpkin puree (not pumpkin pie filling)
  • 1 can (14.5 oz) diced tomatoes (fire-roasted if possible)
  • 1 cup vegetable broth (low-sodium)
  • 1 tablespoon maple syrup
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon salt (plus more to taste)
  • 1/2 teaspoon black pepper (plus more to taste)
  • For serving (optional): sour cream or Greek yogurt, shredded cheddar cheese, fresh cilantro, diced avocado, sliced jalapeños, tortilla chips or crusty bread

Instructions

  1. Sauté the aromatics: Heat olive oil in a large pot over medium heat. Add diced onion and cook for 4-5 minutes until translucent. Add minced garlic and diced red bell pepper, cook for 2 more minutes until fragrant.
  2. Bloom the spices: Add cumin, chili powder, smoked paprika, oregano, and cayenne pepper. Stir constantly for 30 seconds to 1 minute until fragrant, being careful not to burn.
  3. Add liquids and beans: Pour in diced tomatoes with juices, pumpkin puree, and vegetable broth. Stir until fully combined. Add black beans, maple syrup, salt, and pepper. Stir well.
  4. Simmer: Bring to a gentle boil, then reduce heat to low. Cover with lid slightly ajar and simmer for 25-30 minutes, stirring occasionally.
  5. Finish with vinegar: Remove from heat and stir in apple cider vinegar. Taste and adjust seasoning as needed.
  6. Rest and serve: Let chili sit off heat for 5-10 minutes. Ladle into bowls and top with desired garnishes.

Notes

For a thicker chili, mash some beans against the side of the pot before adding vinegar. Letting the chili rest off heat for 10 minutes allows flavors to meld. The chili tastes even better the next day.
