Best-Ever One-Bowl Pumpkin Chocolate Chip Bread

This one-bowl pumpkin chocolate chip bread is incredibly moist, packed with chocolate chips, and comes together in a single bowl with no mixer needed. It’s the perfect easy fall treat that tastes like you spent hours in the kitchen.

  • 1 ¾ cups (220g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 ½ teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground cloves
  • ½ teaspoon salt
  • 1 cup (200g) granulated sugar
  • ½ cup (100g) packed light brown sugar
  • 2 large eggs, room temperature
  • 1 cup (240g) pumpkin puree
  • ½ cup (120ml) vegetable oil
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk (any kind)
  • 1 cup (175g) semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper, leaving overhang on the long sides. Alternatively, grease and flour the pan.
  2. In a large bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, ginger, cloves, and salt until evenly distributed.
  3. Add granulated sugar, brown sugar, eggs, pumpkin puree, vegetable oil, vanilla extract, and milk. Stir with a rubber spatula or wooden spoon until just combined. Do not overmix; a few lumps are fine.
  4. Fold in chocolate chips gently with a spatula. Reserve a tablespoon of chips to sprinkle on top if desired.
  5. Pour batter into prepared pan and spread evenly. Sprinkle reserved chocolate chips on top, pressing gently.
  6. Bake for 55 to 65 minutes, until a toothpick inserted in the center comes out clean or with a few moist crumbs. Internal temperature should reach about 200°F (93°C).
  7. Cool in the pan for 15 minutes, then lift out using parchment overhang and transfer to a cooling rack.
  8. Cool completely before slicing, at least 1 hour.

Notes

For deeper flavor, let the bread rest overnight wrapped in plastic wrap. Rotate the pan halfway through baking for even browning. If bread browns too quickly, tent with foil for the last 15 minutes.
