Instructions

  1. Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease well.
  2. In a medium bowl, whisk together 1 ¾ cups flour, 1 teaspoon baking soda, ½ teaspoon baking powder, 2 teaspoons pumpkin pie spice, ½ teaspoon cinnamon, and ¼ teaspoon salt until evenly combined.
  3. In a large bowl, whisk together 2 eggs, ¾ cup pumpkin puree, ½ cup Greek yogurt, ⅓ cup maple syrup, ¼ cup melted coconut oil, and 1 teaspoon vanilla extract until smooth and uniform.
  4. Pour the dry ingredients into the wet ingredients. Use a rubber spatula to fold gently until just combined (a few lumps are fine). Do not overmix.
  5. Let the batter rest for 5 minutes.
  6. Divide the batter evenly among the 12 muffin cups, filling each about ¾ full. If using, sprinkle pumpkin seeds and turbinado sugar on top.
