Instructions

  1. Hard-Boil the Eggs: Place the eggs in a single layer in a saucepan. Cover with cold water by about an inch. Add vinegar and salt. Bring to a rolling boil over high heat. As soon as it boils, cover the pot, turn off the heat, and let sit for exactly 12 minutes. Prepare an ice bath.
  2. Ice Bath and Peeling: Transfer eggs to ice bath using a slotted spoon. Chill for at least 15 minutes. Tap each egg on the counter, roll under palm to crackle shell, and peel under running cold water. Pat dry.
  3. Slice and Scoop: Slice each egg in half lengthwise. Pop out yolks into a medium bowl. Arrange white halves on serving plate, cut-side up.
  4. Make the Base Filling: Mash yolks with a fork until fine crumbs. Add mayonnaise, yellow mustard, Dijon mustard, garlic powder, white pepper, and a pinch of salt. Mix until smooth and creamy. Taste and adjust seasoning.
  5. Divide and Color: Divide filling evenly into three small bowls. Stir turmeric into first bowl for orange. Stir smoked paprika into second bowl for yellow. Leave third bowl plain for white tip. If too stiff, add a few drops of water or extra mayonnaise.
  6. Layer the Fillings: Spoon orange filling into one side of a piping bag, yellow filling next to it, and white filling next to yellow. They should be side by side in the bag.
  7. Pipe the Eggs: Starting at the wide end of each egg white, pipe filling in a steady stream. Colors will layer automatically. If needed, use a toothpick to gently swirl boundaries.
  8. Chill Again: Place piped eggs in refrigerator for at least 30 minutes, uncovered, to firm up filling and set colors.
  9. Garnish and Serve: Just before serving, dust white tip of each egg with a tiny pinch of black pepper (optional). Serve chilled.
