Salty bacon, smoky little sausages, and a sweet maple glaze that gets all sticky and caramelized around the edges. This easy three-ingredient appetizer is perfect for parties and disappears before anything else on the table.

  • 14 oz little smoked sausages (smokies, such as Hillshire Farm or Johnsonville)
  • 1 lb thick-cut bacon (such as Wright Brand or Nueske’s)
  • 1/3 cup pure maple syrup (Grade A dark amber preferred)
  • 2 tablespoons brown sugar, packed (light or dark)
  • 1 teaspoon Dijon mustard
  • Pinch of cayenne pepper (optional)
  • Fresh chives or parsley, chopped (for garnish, optional)
  • Flaky sea salt (for finishing, optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with foil for easier cleanup, then place a wire rack on top. Spray the rack lightly with non-stick spray.
  2. Cut the bacon slices in half crosswise, so each piece is about 3-4 inches long.
  3. Wrap each smokie with a piece of bacon. Lay the bacon strip flat, place the sausage at one end, and roll it up. Place seam side down on the wire rack with a little space between each.
  4. In a small bowl, whisk together the maple syrup, brown sugar, Dijon mustard, and cayenne (if using) until smooth.
  5. Bake for 15 minutes.
  6. After 15 minutes, pull the pan out and brush each piece generously with half the maple glaze. Return to the oven for another 10 minutes.
  7. After that second bake, brush on the remaining glaze. Return to the oven for a final 5-8 minutes, watching closely to prevent burning. The bacon should be crispy and the glaze bubbling and caramelized.
  8. Let them rest for 2-3 minutes so the glaze sets slightly.
  9. Transfer to a serving platter. Sprinkle with fresh chives or parsley and a tiny pinch of flaky sea salt if desired. Serve warm.

Notes

Don’t crowd the pan—give each piece space for crispy bacon. Watch the last few minutes closely as the glaze can burn quickly. For extra shine, make a little extra glaze to brush on at the end. Let ingredients sit at room temperature for 15 minutes before wrapping for easier handling.
