Best Spooky Halloween Deviled Eggs

These spooky black deviled eggs are a festive Halloween party appetizer with a creamy, tangy filling and dramatic black color. Born from a happy accident, they’re easy to make and always a crowd-pleaser.

  • 12 large eggs (room temperature)
  • 1/3 cup mayonnaise (Duke’s or Hellmann’s recommended)
  • 1 tablespoon yellow mustard
  • 1 teaspoon white vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder (optional)
  • 1/2 teaspoon black gel food coloring (or as needed)
  • Paprika (for garnish)
  • Optional garnishes: black sesame seeds, chives, small olive spiders

Instructions

  1. Place eggs in a single layer in a large pot. Cover with cold water by about an inch. Bring to a rolling boil over high heat. Once boiling, cover the pot, turn off the heat, and let sit for exactly 12 minutes.
  2. While eggs cook, fill a large bowl with ice water. Transfer eggs immediately to the ice bath using a slotted spoon. Let sit for at least 10 minutes.
  3. Gently tap each egg on the counter to crack the shell, then roll between hands to loosen. Peel starting from the wider end. Peel under running cold water if needed.
  4. Using a sharp knife, slice each egg in half lengthwise. Wipe knife clean between cuts. Gently pop out yolks into a mixing bowl. Arrange egg white halves on a serving platter, cut side up.
  5. Add mayonnaise, mustard, vinegar, salt, pepper, and garlic powder to the bowl with yolks. Mash together with a fork until smooth and creamy.
  6. Add black gel food coloring, starting with about 1/4 teaspoon. Mix thoroughly, then add more until reaching a deep, dark black color.
  7. Transfer black filling to a piping bag fitted with a star tip, or to a zip-top bag with a small corner snipped off. Pipe filling into each egg white half, creating a swirl on top.
  8. Sprinkle a small amount of paprika over the filled eggs for a ‘blood’ splatter effect. Use a small sieve or pinch between fingers.
  9. Add optional garnishes like black sesame seeds, chive ‘worms’, or olive ‘spiders’ for extra spooky effect.

Notes

Use gel food coloring for best results; liquid food coloring will make the filling runny. Older eggs (at least a week old) peel more easily. Add a teaspoon of baking soda to the boiling water to help loosen shells. The filling can be made a few hours ahead and stored in the piping bag in the fridge. Add paprika garnish just before serving to prevent it from being absorbed.
