  • 1/2 cup (100g) granulated sugar
  • 2 large eggs, room temperature
  • 1 1/2 cups (375g) creamy peanut butter
  • 2 cups (240g) old-fashioned rolled oats
  • 1 1/4 cups (150g) all-purpose flour (or almond flour for gluten-free)
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup (175g) M&M’s candies
  • Optional: 1/2 cup (90g) semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, letting some overhang for easy removal.
  2. In a large mixing bowl, cream together 1 cup softened butter, 1 cup brown sugar, and 1/2 cup granulated sugar until light and fluffy, about 3-4 minutes with a mixer or 6 minutes by hand.
  3. Beat in 2 large eggs one at a time until fully incorporated, then add 1 1/2 cups creamy peanut butter and mix until smooth.
  4. In a separate bowl, whisk together 2 cups rolled oats, 1 1/4 cups all-purpose flour, 1 teaspoon baking soda, and 1/2 teaspoon salt.
  5. Gradually fold the dry ingredients into the wet ingredients using a rubber spatula until just combined, avoiding overmixing.
  6. Gently stir in 1 cup M&Ms and optional 1/2 cup chocolate chips, reserving some M&Ms to sprinkle on top.
  7. Spread the dough evenly in the prepared pan and sprinkle the reserved M&Ms on top.
  8. Bake for 25-30 minutes, checking at 25 minutes. The edges should be golden brown and the center set but slightly soft. A toothpick should come out with a few moist crumbs.
  9. Cool completely in the pan for at least 30 minutes before lifting out using the parchment overhang.
  10. Slice into 12-16 squares and serve.
