Cozy Baked Apple Cider Donuts with Cinnamon Sugar

These baked apple cider donuts are tender, spiced, and coated in a buttery cinnamon sugar crust. Made with reduced apple cider for intense flavor, they’re a quick and easy fall treat that fills your kitchen with warmth.

  • 1 3/4 cups (220g) all-purpose flour
  • 1/2 cup (100g) granulated sugar
  • 1/4 cup (50g) light brown sugar, packed
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup (120 ml) buttermilk
  • 1 large egg
  • 4 tablespoons unsalted butter, melted and slightly cooled
  • 1 teaspoon vanilla extract
  • For the Cinnamon Sugar Coating:
  • 4 tablespoons unsalted butter, melted
  • 1/2 cup (100g) granulated sugar
  • 1 1/2 teaspoons ground cinnamon

Instructions

  1. Reduce the apple cider: In a small saucepan over medium heat, bring 1 cup of apple cider to a simmer. Cook, stirring occasionally, until reduced to about 1/4 cup (12-15 minutes). Remove from heat and let cool slightly.
  2. Preheat oven to 350°F (175°C). Lightly grease a 6-cavity standard donut pan with non-stick spray or melted butter.
  3. In a large bowl, whisk together flour, granulated sugar, brown sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. In a separate medium bowl, whisk together buttermilk, egg, melted butter, vanilla extract, and the cooled reduced apple cider syrup until smooth.
  5. Pour wet ingredients into dry ingredients. Fold gently with a rubber spatula until just combined (a few lumps are fine). Do not overmix.
  6. Transfer batter to a piping bag or sturdy Ziploc bag with the corner snipped off. Pipe batter into the prepared donut pan, filling each cavity about 2/3 to 3/4 full.
  7. Bake for 10-12 minutes, until golden brown and a toothpick inserted into the thickest part comes out clean.
  8. Let donuts cool in the pan for 2 minutes, then turn out onto a cooling rack. Cool for another 2-3 minutes until warm but not scorching hot.
  9. For the coating: Melt 4 tablespoons butter in a small bowl. In a separate shallow bowl, whisk together 1/2 cup granulated sugar and 1 1/2 teaspoons cinnamon.
  10. Working one at a time, brush warm donut all over with melted butter, then immediately roll in cinnamon sugar mixture, pressing gently to adhere. Place on rack and repeat with remaining donuts.

Notes

Don’t skip reducing the apple cider—it concentrates flavor and prevents soggy donuts. Coat donuts while warm for best adherence. For gluten-free, use a 1:1 gluten-free baking flour blend. For dairy-free, use plant-based buttermilk and substitute butter with neutral oil. Store uncoated donuts in an airtight container at room temperature for up to 2 days; coated donuts are best within 1 day.
